Prep: 30 mins Cook: 5 mins Ready in: 4hrs 35 mins
Directions:
In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.

No-Bake Energy Bites
Ingredients: - 1 cup (dry) oatmeal - 2/3 cup toasted coconut flakes - 1/2 cup peanut butter - 1/2 cup ground flax-seed or wheat germ - 1/2 cup of chocolate chips (optional) - 1/3 cup honey - 1 tsp. vanilla
Method: Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you'd like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week
You can always substitute things in like nut butter for peanut butter. I would caution against substituting agave nectar in for honey, as the honey's thickness helps hold things together.
Some other additional ingredients of subs for chocolate chips could be: - chopped dried fruit - dried berries - chopped nuts - other chips (butterscotch, dark or white chocolate - other grains (oatmeal, rice, cereal etc.)

CHOCOLATE COVERED STRAWBERRIES - FRUITS OF THE SPIRIT: GOODNESS
Review: "This is the simplest version of chocolate covered strawberries I know. Paraffin was originally used instead of shortening. Turn the strawberries upside down and insert by the toothpicks into a piece of styrofoam for easy cooling, or simply place them on a sheet of wax paper. White chocolate may be drizzled over the milk chocolate for a fancier look. They are perfect for weddings when decorated with frosting bow ties, bells, butterflies, roses, etc."
In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.
Insert toothpicks into the tops of the strawberries.
Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate to cool.

Stir the gelatin mixture into the blended watermelon mixture. Add the heavy cream; beat with an electric hand mixer at medium speed until the mixture is fluffy.
Transfer the mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.
